Bar Review: Singlish

A moody Singaporean-inspired speakeasy, hidden in Union Square.

Why go here: In a city filled with speakeasies, it’s hard to find one that actually feels like a hidden gem. Singlish does it perfectly, creating an elegant, yet laid-back drinking parlor tucked away from the bustle of Union Square.

About: Opened in summer 2022, Singlish is a Singaporean cocktail bar created by Salil Mehta of the Laut group and Colin Stevens. The name Singlish - an English-based language spoken in Singapore - describes a blending of cultures, which carries through the menu itself. Creative cocktails derive inspiration from Singapore, Malasia, China, and the West. There is even a food menu from Chard, Mehta’s hawker center-inspired takeout restaurant below the speakeasy, which serves bar food (chicken sliders) alongside Singaporean street food for the more adventurous (marinated duck tongue).

The vibe: Upon entering the address for Singlish, you’ll find yourself at Jelas, Singlish’s tiny sister bar that is also worth a visit. To get to Singlish, go through the unmarked, ornate door on your left and up a flight of stairs. Singlish is moody, decorated with dark wood, and lit by candles, chandeliers and lanterns. Small windows overlook the street below, allowing you to feel hidden from the outside world as you sip an unexpected cocktail. The ambiance is reminiscent of the recently shuttered Angel’s Share.

The drinks: Everyone can find something they like at Singlish - the menu has a great mix of fruity drinks, spirit-forward cocktails, and nonalcoholic options. Singlish executes the classics well, but adds a twist - like their barrel aged baijiu negroni - but also breaks new ground. The “Notya Laksa”, for example, is inspired by Nyonya Laksa, a coconut-based Singaporean curry. The rum-based drink is outstanding - the velvety texture and spicy, tangy flavor is truly unique. Singlish is new, but if it continues its momentum, it will deserve a spot among the best ranked bars in NYC.

How to do it right: Make a reservation, as there is limited space and this is one of the few bars in NYC that actually takes resys. This is a great, intimate spot for catching up with friends or for a second date. For budding mixologists (or those looking to impress a date), there is a “BTO - Build To Order” option where you can mix your own Singapore sling - but with such expert bartenders, I would skip it.
